Long Proof Bread

Slow Dough, Loud Crust.

Two-day ferment • Baked to order • Saturday drop

Naturally leavened sourdough, bagels and buns from a home kitchen in Denver. Baked Friday night, out Saturday morning, or collect from my porch.

The story

It Is Just Flour, Water and Waiting

I have kept the same starter going for six years. Every loaf gets two days: one to ferment, one to think about it. It is slower than it needs to be and that is the whole point. I bake on Friday nights, so what you get on Saturday is barely cool.

    From Bread Buyers

    What Saturday regulars say.

The country loaf is the best bread I have had in Denver, and it shows up on my porch still a bit warm. I have a standing order now.

Everything bagels are dense and chewy like they should be. Theo texted to say he was running ten minutes late, which no one ever does.

I asked what was in the rye because of a seed allergy and got a straight, detailed answer. The olive loaf disappears in a day in our house.
